Taking 1 science per year during Gap Year

I'm a rising senior and still have physics and organic chemistry left for premed requirements. I'm taking a few years off to finish these/take MCATS but if I have a part-time job or research position and volunteer plus taking only 1 science course per year, will that appear to be too spread out and look bad for an application?

I did it, worked full time and took one science class each semester in the evening, sometimes two
