I know that taking classes at a community college (especially pre-reqs) looks bad to medical schools, but what about taking them at an accredited university? For context, I am considering taking a gap year. This would give me time to get more ECs, publications, and presentations at conferences. It would also give me enough time to graduate early and take a few final classes at a university in my home city. This would save me about 30k. Would doing something like this look bad? I already have a bunch of credits from this college from classes during high school and I don't want them to wonder what's up. Thanks!

I doubt it would matter, and for the 30k savings you could apply to more schools.

Totally fine. Happens frequently. As long as you've graduated from the first, taking some post-bacc classes on your own shouldn't be an issue with anyone. The only situation you might have some trouble with is if you're trying to complete your degree at the second school.

What if completing my degree entailed taking a french and an english class?

Are those graduation requirements at your first school? Most schools I know of require your last x amount of hours be completed at the home institution for graduation. I.e. my last institution - last 30 had to be at the home institution. That's going to be more of a graduation issue than a "how will med schools see this" issue. So double check.

My school says, that 36 of the last 60 credits must be taken at the university or a cooperating program established by the faculty senate. I think I'm in the clear as far as that is concerned.

Ok. If your home institution is ok with it, I don't see why it would be a problem. Just encouraging you to make sure. Good luck.

No. A 4 year is a 4 year to them usually. They might ask why, but not dismiss you for it. Financial reasons are legit enough.
