I don't see a problem with this because it could be useful to speak a foreign language in medicine, i.e., you might encounter patients who speak that language and it would be helpful to know some basics. It isn't like you are trying to pad your GPA with a gym class or basket weaving. Personally, I would love to take a sign language course but can't find one near me at a decent location and time.

I recommend you check out a CC. Not only might they have a noncredit class but it is lots cheaper, as well.
 
I'm currently taking Spanish as a post-bacc. I've always wanted to learn the language and I believe that proficiency in Spanish will be useful for my career in medicine. I would say take whatever you want now (Spanish, Chinese, Art History, Philosophy, etc.), while you still have time to do so. If you're genuinely interested in it, adcoms won't have a problem with it.
 
True. It will probably be my last chance for awhile. I'm just a bit scared based on the fact that I'm on the low end of GPA and it may get misinterpreted. Otherwise, I'd gladly take Film Appreciation too.

Why be scared? Take it for yourself. I took tons of music classes in undergrad to keep myself above water and it gave me a break from the science classes. No one will question it. Put your self doubt aside.
