I have taken all the pre-med classes except for physics. If I were to take the Kaplan course and study the EK guides, could I take the MCAT in July, apply to schools, and then take physics in the fall?

well, you will spend ALL your time on physics if this is the case, if you are alright with the rest of your material than its doable but not recommended.

You could, but it wouldn't be easy, and your MCAT score would probably not be quite as good as if you had the physics courses. I'm in a similar situation (I placed out of the first semester of college physics in high school and haven't taken the second semester) and just took the MCAT and I can tell that even though I studied physics a lot to make up for it, I think having taken that second semester would've improved my chances at scoring higher. That being said, if you really wanted to you could start now and if you're diligent, you would probably be ok by July.

Only take the MCAT after you've taken your pre-reqs. Going in without physics is just asking for a horrible score. Not only will your PS score be low, so will your other sections because of the time needed to learn the physics material.
