So I've just started studying bio with TBR and I'm a bit concerned. A lot of the physiology (Bio I) material is including many uncovered topics such as glycolysis and oxidative phosphorylation in their passages (I've only done the first passage of bio 1 section 1) as understood concepts. Is there an order I'm not understanding in reviewing bio? Should I read Bio II (molecular cell biology) before Bio I?

No, it's not you. TBR Bio is far from ideal. The concepts will start coming together eventually, since the more you cover, the less things will be surprises. They still do stupid things, like asking you questions on topics they have not covered and claiming you learn better that way. Their metabolism section is serious overcomplicated (second half of book two). If you have a chance, use TPR or EK for review. The passages from TBR are still fairly useful albeit a bit too pedantic.

Agreed. TPR Bio is incredible.

It seems TBR bio passages are not testing your understanding of the chapter material. Most of the learning comes from reading the passage answer explanations. Don't get discouraged if you do bad. In a way it is good because you are forced to arrive at an answer through the process of elimination and logic, which is what the MCAT is all about. If you have a strong science background TBR bio passages are not as difficult as people say.
