do you think sending a thank you letter to your interviewer will be recieved well or just be extraneous brown nosing? Basically, will it make a difference in your application?

I don't know how much difference it will make, but sending a thank-you note after any business interview (which is what admissions interviews essentially amount to) is appropriate & even recommended.
