Going to +1 the arugula hate, I always swap it for spinach myself lol.

So one of my favorite "meal prep Sunday" items is the Thai Turkey burger from Food and Wine. It makes 4 patties, I usually have one on Sunday night when I make them, on a bun with Sriracha mayo, and then eat the rest throughout the week for lunch or dinner. Works great on a bun, a lettuce wrap, or over a butter lettuce salad with a vinaigrette, shredded carrots and chopped cilantro.

Actually, I was pleasantly surprised by a local place's pizza- arugula, avacado, chicken, bacon, and a couple other things I'm forgettng. It kind of made me realize that arugula has its place in some dishes, because it really tied everything together, but it's still a thing that I wouldn't use more than lightly and as an accent or balancing flavor for other things present in a dish.
 
Scotch Eggs.

I'm sure there is a legit recipe somewhere but I just buy readymade sausages, (1 per egg) remove the skin, flatten the sausage and use it to wrap the boiled egg. Dip in (beaten egg, roll in bread crumbs) x2 so it doesn't open when you deep fry. Voila!
As far as quick, easy and delicious go, yum!

5 lbs ground beef

1 can light red kidney beans
1 can dark red kidney beans
1 can pinto beans
2 cans HOT Rotel diced tomatoes
1 large can diced tomatoes

Cook the beef in a skillet and drain fat. Open all the cans of beans, put them in a colander, rinse well. Place beans in crock pot. Drain the corn and add it. Add all the tomatoes without draining. Mix well.

Add in a good bit of red pepper flakes and red chili powder, salt, black pepper, cumin, garlic powder, curry powder (not much), some cinnamon and maybe a bit of chocolate (trust me on this), a few squirts of sriracha (but not enough that you taste it!). Bonus points if you saute diced onion in the beef fat and add that as well.

Crock pot on low for 6 hours. Refrigerate overnight before eating for best results. Serve with sharp cheddar cheese, sour cream, and (optional) green onions.

Best damn chili ever.

I make it in a crab pot, it's literally 20 liters of chili, and it's amazing.
 
Haha no, two completely different meals - although they are both from the same neck of the woods.

The sausage coated in breadcrumbs sounded like an Americanized version 🙂 gonna have to try it sometime
 
Here's a few of my simple recipes
Pulled pork

Ingredients:
5lb pork butt
A bottle of your favorite BBQ sauce (Sweet Baby Ray's for me)
Garlic powder
Half bottle of your favorite beer (Sam Adams Lager works nicely)

Instructions:
Combine everything in a crockpot and cook on low for 8 hours. Afterwards, tear apart with fork.

Chicken Stir-fry with rice

Ingredients:
2-3 lbs of chicken breast, cut into cubes
3 tablespoons terrayaki
1 tablespoon lime juice
Salt/pepper
1 tablespoon sesame oil
1 tablespoon cornstarch

1 large onion diced
2 peppers (one red, one green)
2 cups of short grain rice
splash of rice vinegar
2 tablespoons of butter

Instructions
Combine chicken, teriyaki, lime, salt/pepper, sesame oil, and cornstarch into a gallon bag. Mix and marinate overnight. Cook rice in rice maker, then allow it to dry out slightly by keeping it on warm and the lid open. Also stir in butter after the rice is cooked. While the rice is cooking, sauté your veggies, remove, then cook your chicken on high heat. After all of that is done, combine rice and veggies into your wok and sauté for 2 minutes, adding some soy if you want.

That sounds amazing but it would take me waayyyyyy too long to eat 20 liters of chili. My recipe tried to balance time::quantity::appetite haha.

Oh, you freeze a lot of it. Give some of it away, etc. But it takes about as much work to make a small pot as a big one so I go all out.

Lately for breakfast I've been eating mashed avocado on sprouted grain (Ezekiel) bread toast, topped w/sliced tomato (or salsa) and salt n' pepper.

On alternating days, I grab an open-faced breakfast sandwich w/low cal flatbread rounds, a turkey or pork sausage pattie, fresh cheddar cheese, and sliced bacon cooked up in a big batch. If you make your breakfast sandwiches and wrap them up on Sundays, you can grab them from the freezer throughout the week. Better and cheaper than McDonalds, and low carb if you have just 1 slice of bread.

That stir fry sounds so flavorful! Looks like it would work with cauli-rice as well. Bet the sauce is yummy w/teriyaki!
 
To throw another quick recipe in the pot - do a quick Google search (or Pinterest even) of peanut butter/almond butter power balls. Super easy to make (they are "no bake"... just refrigerate after making them) with relatively few ingredients. The only semi expensive thing is almond butter, but darn if it isn't worth it
Do you salt them for added flavor?
 
Has anyone been using instapots? I feel like it has replaced my slow cooker and rice cooker but I am still trying to build a repertoire of recipes.

Love my instapot! Perfect HB eggs in 6 minutes on the pressure cooking setting. 🙂

I don't use the pressure cook feature as much, but when I do, it's usually for porkchops. Super moist!
 
Red Beans & Rice in a slow cooker. 1lb Redbeans, chicken stock, water, 1lb sweet onion sausage (sliced into 1in pieces), ~1 cup of brown sugar, sliced chicken thigh (opt), 3 bay leaves and as much tony's as you want. Place it all in slow cooker, for the liquid it is 3 parts water, 1 part stock. Cook on med for at least 4 hours. Add more brown sugar later if desired. Any actual Louisianans feel free to add/critique.

I prefer the andoullie sausage, you need some dried thyme and it is blasphemous to not include the Trinity (bell peppers ,celery, onion equal part) . Not a Cajun just a fan .

I didn't mean to forget the Trinity, I am just so use to using it now I thought it was implied in everything. #LouisianaProblems

I have been trying to make a chicken etouffe for ages now and still can't quite make it taste right.
 
What are some very quick and simple recipes for a newbie like myself who has never cooked a meal and can't identify different kitchen equipment/know how to use them?

1) Get pork butt (Shoulder)
2) Place Butt in oven safe pot
3) Pour 2-3 cups of liquid of your choosing (I like beer), some brown sugar and mustard in pot, cover pot
4) Place pot in oven at 250-275F for at least 3ish hours
5) Now you got a basic pulled pork

It's about as cheap and easy (one pot) as it gets. And bonus you don't really have to watch it, and unless you forget it in the oven for a day (where all the liquid evaporates), it's kinda hard to overcook.

I will eat anything as long as it's quick and easy and don't require much cooking knowledge or skill.

Just trying to save some money because I've been eating out almost every meal and I feel so incompetent when it comes to cooking.

Can ppl please add on to my list of quick (15-20mins) healthy foods:
1. Tuna sandwhich (3 mins)
2. Oat meal, protein, peanut butter shake + any fruits (3 mins - grind oats in grinder and then blend everything)
3. Fish (tilapia, salmon, etc.) (20 mins - thaw fish, put oil on pan, heat pan, cook tilipia till brown)
4. Shrimp (~10 mins, just boil)
5. Rice (15 mins in rice cooker)
6. Deli meat sandwhich (3 mins)
7. PBJ (3 mins)
8. Eggs (5 mins-boiled, fried, etc.)
9. Cheerios (regular, not honey nut, is about as nutritional as oatmeal)
 
does your recipe really have a CUP of brown sugar? I don't think of red beans and rice as a sweet dish....
Yeah, I like mine sweeter more than spicy. Its also in a massive crock pot so it really isn't that much. I can get almost two weeks of dinners out of it, and I eat large portions.

I mean it's pretty fing hard to mess up something with avocado, chicken and bacon

You are eating a lot of mercury and nitrites.

I'll make this even quicker for you. Season your fish after thawing then broil in your oven for ~8 min (may be less, maybe more depending on the thickness of your fish).

Frittatas are also great. Depending on how complex you want to make them, it may take you around 30-45 min to make, BUT you can get around 4-6 servings from one dish.

EDIT: One more quick meal would be stuffed peppers. Cook some ground meat, onion and some black beans with some taco seasoning. Then, slice a red pepper and take out the core. Stuff the pepper with your meat/veggie mixture, and top with shredded cheese and then bake. Serve with a side of rice and avocado.
