It helps to show different experiences and exposure. If you have not done any clinical volunteering but have done non-clinical volunteering then thats fine. But I do recommend you shadow one physician outside of your work so you get a different perspective. There is nothing wrong with what you are doing but do not list this experience as shadowing, work, and volunteering ont he application (3 different times). It will count as one.

I'd shadow a few doctors outside of a Euro context as well, but that sounds like a pretty solid experience.
