I emailed a few schools and about got 2 meetings, 2 "we do not meet with future applicants", and was ignored by 6 schools.

anyone have tips for getting a 15 minute meeting with an admissions committee? I think one tip to start with, of which i did not do enough, is to focus on whether you "are a good fit" for the school, instead of just asking to go over your credentials. Anyone have success in arranging meetings with admissions? Any advice?

Pull any connections you can. Surest way to success. The fit for school rather than credential focus sounds like you found some money as well.

I would call and try to schedule a meeting. In the spring/summer as long as your currently aren't applying, they should be able to meet with you. If you already applied, they can critic your application after the season.

I did meet with a Dean of a medical school once while applying to there school two years ago... since admissions wouldn't get back to me and I was trying to up my cards... it didn't help.

I really don't think this helps you any. Everything you need to know about a school you should learn or get a chance to ask at your interview day; everything they need to know about you they will get from your application or ask you at your interview. So you're just sinking a bunch of money going to an "interview" that doesn't actually matter or help you in any way.
