In my 2007 KAPLAN Orgo MCAT book, it says torsional strain results from the eclipsed conformation, which I also see all over the Internet. But in my 2016 KAPLAN Orgo MCAT book, it says torsional strain results from either eclipsed or gauche. Which is correct?

There can be a certain amount of torsional strain from gauche interactions depending on the size of the groups, but in most all cases the strain resulting from the interactions between eclipsed groups will be greater.
