I took a non-credit language class at a community college for fun last year that was listed under the "community education" department at the school. It was a night course geared toward adults already with careers, not for students looking for credits.

The course doesn't show up on my transcript for some reason, should I bother listing the class on AMCAS and sending them the transcript? I'm pretty sure I'd be sending them a blank transcript.

I'd call the CC and make sure that you don't have a transcript with them. If no, then don't worry about it. If yes and you don't list it, it could cost you a delayed AMCAS application which is never good.

If the CC lists you as having matriculated there, and if they won't give you a meaningful transcript, you may need to get a letter from them stating that no grade was earned.
One (1) official transcript is required from each U.S., U.S. Territorial, or Canadian post-secondary institution at which you have attempted coursework, regardless of whether credit was earned.

If No Official Transcript is Available
If the institution only provides a certificate of completion or no official transcript is available, the registrar of the institution must send AMCAS an official letter verifying that no official transcript is available.
