This may sound like a stupid q, but why would an ester want to change its OR group. I mean what drives this rxn? is it simply the presence of an alcohol with a different OR group?

Well if you have a different OR group, so you can always get a mixture of products. It's not that an ester wants to change its OR group, it's just because it can.
