first, i have been okayed to do research over the summer with a cancer stem cell group, which i am very interested in doing. (although as this is my first research, i doubt i'll be handling stem cells directly lol) But the PI is someone i dont regularly have contact with, with regards to the school curriculum. of course, once the research starts, i expect to get in touch with her regularly.

the other option is research on cardiac myocytes. this interests me less, but the PI will be my professor at one of my classes, which gives me more opportunity to interact with him.

for either of them, i plan to continue working in the labs through to next year.

which one would land me better LORs? the one with interaction just in the lab, or both in the lab and in class?

You will be willing to work harder and show more interest in the first position. I would bet money that you will get a better LOR from the PI who has research interests similar to your own.

do you know if anyone else has gotten into med school from those labs?

This is all assuming you perform equally well at both labs. It's not like you're gonna work for the second PI and be like "well, I actually like cancer research more."

OP: Don't get discouraged. If you've been ok'd to work at the lab, you will very likely be working with stem cells by the end of the summer.

Good luck!
