Undergrad Transferring Without a Pre-reqs completed

So right now, I'm a California community college student and I'm trying to transfer into most of the UC's biology degrees. I was wondering, would holding off taking organic chemistry and physics until after transfer affect transfer admissions? Before transferring, I would have biology, math, general education, and chemistry done.

My school does however offer physics and organic chemistry so it's not like one of those, "I don't have a choice" things.
The physics at my CC is engineering physics and I don't feel like taking that and if I were to take organic chemistry, I would only be able to complete half of the 2 semester sequence of organic chemistry prior to transfer, given that I am accepted. I've been told that it's best to complete a sequence of courses in one institution so I'm not entirely sure about what to do.

Any insight or advice?
