I understand from the website they have a minimum of 100. That is not a big deal, however I read somewhere (I can't recall) that 100 have to be under the same dentist. Which is a small issue for me considering I have 40 each under three separate dentists. Can anyone confirm or deny this?

Let's give the poor guy a break.
 
100hrs minimum dental volunteering/shadowing/observation. For reference, I was accepted there with less than 100hrs of shadowing (one general dentist). Probably a good idea to do more than the minimum and split between general/various specialities, but also maybe not a big deal depending on who is evaluating your application and what their respective values are.
