I met an old friend (going into the medical field) today whose dad is a dentist. He graduated from UoP and told me that his dad could be a reference if I wanted him to be. Well I want to go to UoP but am unsure of how to work this? Do I have him send a letter to the school or have him call?? Does it even matter right now so late in the process? I got a letter from them the other day telling me the application was complete, explaining the admissions process and telling me not to call in asking questions about the application (general letter they send to everyone I guess). So what do I do?
 
Do whatever you want. A good word or two from a dentist who graduated at Pacific can be helpful, but probably not unless that alumnus has some pull or knows your pretty well. I mean, there are 6000 alumnus of Pacific still out there today and the admissions committee doesn't know all 6000, so they aren't gonna just listen to some random alumnus who hasn't been that involved with the school post-graduation who says "The friend of my son is applying. You should take a look at him, he's a good guy."

If the dentist has something substantial to add or say, I guess a letter sent to the ADCOM or a phone call can't hurt. But if you are a competitive applicant already, it probably won't sway much either way.
