What are your thoughts on sending out update letters and/or letter of continued interest for a particular school? Is it a good idea to send an "interest" letter to a specific dental school that has not yet offered you an interview?
Who should the letter be addressed to exactly?

What are you going to say in your letter exactly? Choose your words carefully, otherwise your letter could come off as annoying/desperate.

If schools felt "update letters and/or letter of continued interest" were important they would be asking for it.
