Updating CV/resume

So, I'm in the process of updating CV/resume. This is the first time I've had to change it since graduation, so a lot of it is based on pre-vet employment and the electives/rotations I did during school. How much of that should I leave in, and any recommendations for what to replace it with? Most of it is not super relevant anymore (e.g. the ultrasound elective since I haven't had access to ultrasound in 3 years).
