What's the best way to contact programs about a new publication that has been accepted? Through ERAS? Direct email? Thanks.

I don't see one accepted publication would make much difference at this point. You can email all the program you applied individually to let them know (I don't know if ERAS allows you to update once it was certified). The best way is to bring it up on your interview day.
