Tried for months to find a medically relevant job in my area to no avail, so I took up a job offer for an advertising company because the bills still need to be paid. Would it be worth it to update schools with this information?

I say yes. If only for a reason to reiterate in the update that you want to be at x, y or z school

If I was reviewing the application I don't think I'd care about that update, personally.

what type of updates do you care about when reviewing applications? only clinical/research related jobs? is there any time adcom members would want to know about a non-clinical work experience?

It's hard to say. I was looking through residency applicants today and I cared very little about what their publications were, only cared that they had publications. I cared a tiny bit about where they went to school, but cared a lot about their scores. I looked at their hobbies and interests and in general ignored their work experiences and awards.

Everybody cares about something different. All I'm saying is if I saw your application and saw your GPA and MCAT (hypothetically) and wasn't impressed enough to offer you an interview invitation right off the bat, I doubt letting me know that you got a job -- any job, really, even a clinical job -- is going to change my mind. Your new job, in my opinion, is largely meaningless compared to your educational history.
