I found this website; the data seems old and incomplete:

I would suggest getting the Veterinary Medical School Admission Requirements (VMSAR) book. It's updated every year, and has very good info along with stats.

In addition to the previous poster's very good suggestion, you can also pick through each school's website.
For example VMRCVM has the 2008-2009 applicant stats posted here.
