Most schools seem to be pretty accommodating about rescheduling an interview as long as you are able to schedule during their normal interview period (ie. different time, day of the week, etc). I rescheduled my interview with Tennessee one year due to work conflicts, and it was no big deal. I wouldn't try to tell schools in advance that you can't interview on a certain day, though.
