is volunteering as mandatory for getting into dental school as it is for med school, or are we good with just shadowing?

volunteering isn't mandatory, but I'd think most successful applicants will have been involved in some sort of volunteer activity (it doesn't have to be dental-related).

Not specifically required but is IS better to have some than none at all. On the application, under "Professional Experience" there is the grouping "Extracurricular/Volunteer/Community Service" with up to 10 spots to list your experiences.

No, shadowing goes under "Dentistry Experience."
