I am done with DAT and looking forward to do some shadowing & volunteering in June.

I volunteered about 30 hours and shadowed a dentist in korea for about 40 hours.

I am thinking about just writing down on AADSAS about my volunteering and shadowing plans for this month. Would this be helpful do you think? Would adcoms think that I am just rushing to volunteer and shadow to increase my chance?

Also, I found out that I need to do orientation for about 12 hours in order for me to volunteer at the hospital. Did you all have to go through all this too? I think 12-hour orientation is not worth doing it, since I am looking for a long-term volunteering.

I am thinking about at least 40+ hours of shadowing and 20+ hours of volunteering during the summer.

Two things:
1) nothing wrong with continuing to volunteer. I am also going to do so and will continue through my senior year.
2) I think that you should be done (or almost there) with the shadowing already especially if you are planning to apply early.

my health advisor told me that if you already started doing a shadowing or volunteering, you can put it down that you started and will continue to such a date.. if you haven't started yet, then it becomes iffy.

I think adding future job shadowing plans is ok and actually at USC this past weekend they encouraged it.
