If you get an invitation for an interview but are waiting for other replies before booking it, how long could you wait before upsetting the program. And if you schedual an interview right away, is it OK to cancel it later?

It is OK to cancel later. You should schedule right away because many programs offer more interviews than they have spots.
 
you should schedule so that you can get the date that you want, even if you don't know exactally what date that is. my point is that by the time you know your perfect date, it may not be avaliable then, you could always try to reschedule.

I waited 2-3 weeks before calling one place and the coordinator told me something like "oh, we were afraid we were never going to hear from you".
 
Schedule interviews as soon as possible. One of my interview invitations blantantly stated that they offer more spots than are available and that available spots were first-come-first serve.

Like someone else said, you can always cancel later.
