Welcome to the forums.

As a non-trad applicant, you must include DO programs. Your best MD program shot is Washington State, and you have a few options for DO, especially with PNWU. Outside of that, you need to do some serious networking and be willing to move away from Washington. Carle Illinois, Texas A&M EnMed, and Arizona State's new MD program are programs to consider. However, your low MCAT will be a deterrent for any other schools you may target, including UW. If you really want to go to an MD program, you will need to take the MCAT again and score higher than 515 (+10 from your original score).

I'm also not enamored of the non-clinical volunteering. I would prefer more activities that address significant societal challenges: food distribution, shelter volunteer, job/tax preparation, legal support, transportation services, or housing rehabilitation.

I am guessing there's a reason why health IT/cybersecurity is not something you want to pursue. You have better insight about job prospects.
