Well, even your 515 MCAT makes applying to some of the schools on your list dubious (Harvard [521 median], Northwestern [521], Columbia [522]). Rush and most Jesuit schools like to see hundreds of community service (non-clinical) hours in alignment with its social justice mission (which I don't see).
Did you use the MSAR data to make this list, or are you relying on "connections"? If you trust your connections, you will be disappointed as you're prioritizing a "plus" factor over the bread-and-butter metrics... and that's not how this process generally works. (It's not like applying for grad school.)
I am delaying as others here can give you a better list of suggestions, but I point out the schools where it's much more of a reach based on the numbers.
Rush expects far more non clinical volunteering hours than you have. Harvard, Columbia, Cornell and Northwestern are reaches with your MCAT of 515. You could add these schools:
Quinnipiac
Vermont
Hofstra
Rochester
Albany
Pittsburgh
Temple
Illinois
The solid non-clinical volunteering activities are the ones where you are DIRECTLY involved in assisting people who are less fortunate than yourself. The homeless, veterans, immigrants, etc. Your podcast and fundraising activities, while interesting and impactful to people, are probably not the service-related activities medical schools are looking for.
Your meal program volunteering is probably the best service-related non-clinical activity you have.
