I applied to the 2022 EY cycle and received 3 IIs. However, I believe my interview skills were subpar.

So you took a year off of applying (currently)? Were you rejected not waitlisted from the 3 schools? What feedback did you get?

With your higher MCAT score of 514 and improved ECs you should receive more interviews from the Texas schools. You should apply to DO schools also and I suggest these:
