What are acceptable clinical experience?

Would working at an optical field be acceptable? Does medical reception count?

I also have scribing experience and shadowing/volunteering experience and I know those would count.

It depends on your role and the type of patients you'd be interacting with. Do you have more information or examples?

As an example: I got most of my active clinical experience as a medical receptionist in an outpatient MD office that saw a variety of patients. I answered patient calls, greeted patients and roomed them, did EKGs and urine dipsticks, assisted during procedures (besides doing the bookkeeping and cleaning rooms).
 
I'd be more impressed if you interacting with actual sick or injured people.

at an optometry clinic I perform eye tests and help fit patients for glasses and contacts and other medical receptionist duties

this certainly counts, but like Goro said it would be good to get something a little grittier under your belt

work with disadvantaged populations
elderly, homeless, poor, disabled, addicted, diverse groups
 
If they are patients and you are close to them, it counts. That said, it might be a good idea to get some exposure to people who are seriously ill or injured. There is just a whole different vibe when someone is scared, angry, frustrated. That's less likely in the eye exam room.
