What can I do to make sure I'm ready to apply for next cycle?

I'll be applying next cycle. My cgpa and sgpa are both around 3.7, working on getting them up. I currently volunteer in a doctors office every week and am doing research at a mid tier university in NY. Shadowing one doctor every once in a while whenever I'm free. I plan to begin preparing for the MCAT sometime soon.
What kind of activities can I do to help increase my chances?

Well, your GPA is fine so don't worry about that. But if you're only now beginning preparations to take the MCAT I think you might have a bad time if you want to apply in 2016.

Sorry, I misworded it. I'll be applying in the cycle next year, so 2017, which gives about a yea for the MCAT.

do what you want to do. anything that shows you're a hard-working and compassionate individual. connect with the physicians you're shadowing, make sure you ask questions out of genuine interest. do something to make yourself happy, it will go a long way to make you motivated.
 
Ok so you did well in school, meaning you got good work ethics. You have some experience in the health care field. You've been exposed to research and you'll probably do well on the MCAT. Great.

But that describes basically every premed out there. What activities make you stand out? Are you a teacher, tutor? Do you lifeguard or instruct a class at the local Y? Do you run or dance? You should do more things that you enjoy and things that teach you more about culture, communication, diversity, leadership.
