I'm a Canadian with a honours degree in biochemsitry with an average of around 3.2 and a MCAT score of 30M. Should I even bother applying to any medical schools in Ireland?? I'm thinking I should just rewrite the MCAT next year.

Why, do you think your average is not good enough? It certainly is. You will have to weigh losing another year waiting to retake the mcat and then your GPA would be weak in the states or Canada, but in Ireland you have a good shot if you have a lot of extra curiculurs, this is very important.
 
You may be competitive for irish schools, but I think you need to look at 1)how will you pay for irish med school and 2)where will you train, and eventually practice?
