What happens after the interviews at the UC's?

I'm just curious to see what people's experiences have been. It seems like some of the UC's accept a few and then put everyone else on a waitlist, while others actually reject people immediately after the interview. Anyone know how each of the schools does it, especially UCSF and UC Davis?
