what if you don't do any ec's through the school year and do them all in the summer?

It really depends on the person interviewing you. At one of my interviews, the person interviewing said something to the effect of, "I was looking over your application and noticed you've been volunteering at a hospital for 2 years now. I'm glad to see that, because I get tired of these kids who volunteer for 2 months and think it should go on their application." Just my two cents worth.

I volunteered for my shadowing during the summer just because it was a lot easier for me since I was back home and had a car...if I had to shadow during school time and use public transportation to get to doctors office/hospital, it would hve been a nightmare. I think as long as you show some dedication and put in hours (i did approximately 10 a week but it seems like a lot of people on this post actually make it a full time job during the summer in the range of 30-40 hrs).

yea, i am in a similar situation, because i am an out of state student at my university, so when i go home for the summer, i only have 3 months to get experience
 
I did two summers, 20-30 hours a week in some weeks, less in others. I had the same problem of having no car, so when I was home over the summer it was easier. I've been successful so far, I don't think it matters when you do it, as long as you show dedication.
