Most schools are rolling. Off the top of my head, I could probably only think of maybe a dozen that are non-rolling, which include some big names and the public TX schools.

This is just from the schools that I've had experiences with.
Non rolling:
Cornell?
Duke
Harvard
NYU?
Yale

Rolling:
Johns Hopkins
UCDavis
UCLA (even though they start rolling WAY late)
UCSD
UCSF
U Mich
Vanderbilt
Wash U

Texas schools (http://www.utsystem.edu/tmdsas/) starting this year (entering class of 2007) is now rolling! However, you can hold to multiple acceptances in Texas until feb 1, 2007.

Sorry. I guess Texas decided to act like the rest of US Medical Schools.
Thank god I applied and accepted before this change in admission procedures.

But do consider Texas, the average stats is slightly lower than AMCAS schools.
