For the PS, did most of you include more than one experience, research, academics, volunteering? I only talk about working at a doc's office and the patient contact i got there which reassured me about being a doctor, but i feel like most people mention a lot more in their PS?

Use all the free resources available to you from SDN: articles, guides, expert advising, forums discussions, and school research.
Mention whatever experiences you have that you are able to discuss intelligently. If you're able to say how that experience shaped your interests and desire for becoming a doctor, its good to include. There is no reason to go through all medical experiences you have, save that for secondaries/aacomas/interviews.
So why do you want to be a doctor? What experiences have you had in life that have brought you to this point? Is there any specific event that might have started you on this path?
The question for the PS is WHY? By answering that question, you'll have your PS.

Beware of turning your PS into a biography. They don't really need that because your primary application already tells them where you live and went to schools, what clubs you joined, what honors you had...even what you do in your spare time. The PS is for them to get to know you as a person. What drives you emotionally? How well do you handle adversity? Have you taken on leadership roles and prospered?
In other words, tell them something about your character-- what really makes you tick. Remember that a good story is both compelling and memorable. Other than an historian, who really remebers the details of george Washington's life? i.e. birth and death dates, where he went to school, what his dog's name was...etc. But everyone remembers the story of him chopping down the cherry tree. It conveys both his flawed human side as well as his honesty and integrity.
Tell them that kind of story about yourself, using all of those literary techniques you forgot about from freshman English, and they will remember you.
