They are both useful subjects but a context would help us answer your question.
 
Well, I'll give this question a shot. I took animal physiology this past semester and found it very interesting and I learned a lot about systems of the body which everyone tells me will come in handy on the MCAT. I have yet to take the MCAT so I guess I'll find out if it really helped in April.

I spent this past summer doing a summer research fellowship in toxicology and also learned a lot working on an immunotoxicology project. But toxicology is a huge field and incorporates a range of diciplines from physical and analytical chemistry to histology and physiology. I think if the course focused more on body systems and their reponse to pollution could be useful for the MCAT. If it is is an overview of the discipline, however, it may not be as relevant though it would probably give you more chemistry exposure. I think it is a fascinating field and would say go for it if you just want to learn some cool stuff. Without more knowledge about what exactly you want to gain from either of the 2 courses it is hard to give more advice than that. Hope that helps.
 
I find physiology much more helpful overall. It certainly helped me for the MCAT.
 
I'm referring to medical school. I haven't had any physiology type of course, I have, however, had a course in toxicology. This course places emphasis on toxicity. I'm unable to take both since they are offered at the same time.

Given that you've already done some toxicology and no physiology, I would probably pick the physiology class because I think it is definitely good material to be exposed to before med school and the MCAT.
