what is it called when u break a chain of amino acid?
 
hydrolysis I believe, since you're breaking water to break the chain.

Yes. The opposite of making a peptide bond would be condensation (dehydration) where water is removed from the molecules.
 
Hydrolysis is the breakdown of a molecule into two fragments by the addition of a water molecule. Condensation reactions, also known as DEhydration reactions, join two molecule fragments into one piece, producing a water molecule in the process.

I think you mean condensation is also known as DEhydration. Hydration is like the addition of H2O with acid to an alkene producing alcohols.
