when should I apply?

Do I have a better chance of getting into the carribean schools, if I apply for entrance during the Winter? Or should I just stick to the Fall admissions?

Reason I ask is because how much competition is there compared to fall and winter admissions?

I would apply for whatever term you feel more comfortable in starting. That being said I think there is a little less competition in the Jan term rather than the Aug term because most people want to begin classes when they normally would but it is totally up to you
