When to take the MCAT?

I'm going into my junior year and have taken the following so far: Gen Chem 1 and 2, Orgo 1 and 2, Gen Physics 1 and 2, and Intro to Psych. I will be taking Biochemistry I and 2 junior year and was wondering when to take the MCAT because I have yet to take both semesters of Bio. A few options I can think of is taking bio 2 this starting next month and take bio 1 during the fall so that I can study fall semester for the January MCAT, which is the last one being offered before the new version kicks in. Or I can just take both semesters of bio during the school year and take the new version of the MCAT. I just need help with dates I know that people need 2-3 months of rigorous studying but I don't know how I will have time for that. I have a month off in December and other than that I can dedicate time to study everyday throughout the semester. In addition, I want to take MCAT classes and was wondering when I should take those.
 
First question, how is gen bio not a pre-req for your biochem class or orgo?

The proposed timeline is to take the MCAT either second semester junior year or the summer between your junior and senior years. That is if you are applying to enter in the fall after your senior year.

But a lot of people take a gap year and it is not a big deal at all to do that

the best time to take the MCAT is when you are ready, in all honesty. most people take somewhere between 1-6 months to study for the MCAT depending on if they need to re-learn the material first or not. there are proposed schedules on the website here if you search around that a lot of people have success with.
