It'll depend on the job.
Option 1) Medicine, because it is what I love. I have lots of clinical experience that leads me to believe it is the only profession I can see myself in that will bring me the most personal satisfaction.
If there was a field outside medicine that I loved more which brought in even $20,000 a year, I would be in that field right now.
Don't let a salary dictate your future.
Many years from now, please come back and revisit this comment of yours. I'd like know if your impression of medicine ever sways from your current mindset.
Job you like but not love.

And yes, it won't all be peaches and cream but almost all occupations have their undesirable aspects.
(1) Pursue medical school knowing you'll graduate with 200-300k in debt, won't be able to practice until your 30's, and the ramifications to your personal well-being generally.
(2) Stable, well-paying (100k+) job straight out of undergrad with good hours and a great work environment (not in medicine).
What kind of job is this?(2) Stable, well-paying (100k+) job straight out of undergrad with good hours and a great work environment (not in medicine).
You're asking this on a forum where we're all striving to be doctors... 😕
fixed.
I still can't find an undesirable aspect to what Anthony Bourdain does for a living.
Clearly, you have never worked a day in a busy restaurant kitchen.
