I want to write a letter of interest to a school post interview. We were told by the Dean that he does not have a vote on the committee but he does sit in. My question is, should I address the letter the the Associate dean who interacted with the applicants throughout the day (I'm not sure if he has a vote) or to the Dean himself. Also, the associate dean indirectly addressed a weakness in my application, should I mention that in the letter of interest or should I not risk it being highlighted during the committee meeting?

i would send letters to both dean and associate dean. if you do say anything about the weakness, talk about what you've done to take action since last you spoke and just basically focus on the qualities you posess which will make you a desirable candidate.
 
I was told by a student on an interview day tour that I should write one to "the admissions committee". Anything addressed to the whole committee would be read on decision day to the entire body. Not sure if that's the case at all schools, but that would get your message across to the right people.
