I do have some time, since I'm not taking the DAT until 6/25. What if my committee letter isn't received by the time my scores are verified? Will my app even be looked at? Everything else will be done.

They will most likely wait until it arrives and you have a completed application before reviewing. However, you're still super early and nothing will happen in June/July.
