If I withdraw from a program, will they still be able to see updates to my ERAS, like transcript, or other documents?

Yes,, if they were to go and look for it. When you withdraw your application will no longer appear as an "active" application, so unless they specifically as ERAS to show them their inactive/withdrawn application they will not see it.
