In my meaningful essay, I am writing about an experience at a children's hospital where a kid was diagnosed with a brain tumor. The hospital said that I cannot talk about the patient. In my essay I am do not specify the names, and talk about an event where the mom just wanted to talk with me.

Would the adcomms be annoyed that I talked about a patient who had a brain lesion and a deadly brain tumor?
 
As long as you're following HIPPA guidelines you're fine. You already know not to give names/specifics

Fixed above and also note that cases are discussed all of the time. Your goal is to edit enough information that the patient cannot be readily identified.

You're fine, make sure there's no PHI in it and the story is 100% fair game. I used a story of a 2 year old and his mother that I met in the ER, just had to change their names.
 
No, lots of people talk about patient encounters that had a long lasting impression/influence on them.

My essay uses a story of a frequent flyer patient I had a number of summers ago, I just removed all identifying information. You can discuss cases as long as it cannot be directly linked to a patient. My 50 y/o male who flipped over his tractor and ended up with a hemopneumo, flail chest and severe abdominal trauma is unidentifiable, it could be any 50 y/o male in the US, even though I described specifics of the case itself.
