For the past couple I would do dictation for my dad for extra spending money. My dad has a private heart clinic, and so after seeing the patients for the week and dictating the his findings on tape, I would listen to the tapes over the weekend and type out all the data for history and physicals, stress tests, EKG reports to be sent back to the referring physician. Would this count as clinical experience, even though I never was in contact with the patient?

There is no patient contact, or even passive direct observation of patient interaction, so I would not call it clinical experience myself. It is relevant work experience since it gives you some insight to a doctor's job, but calling it clinical experience is probably not a good idea.
