Writing about super recent activity (not included in primary) on secondary apps

Hey guys, Im a sixth year pharmacy student applying to medical school this cycle. I have spent the last few weeks of my sixth year rotations in a clinic for the underserved. Would it be okay to mention this activity as furthering my interest in working with diverse populations? The only issue I can see is that it is super recent and wasnt mentioned in my primary applications. I only wanted to include a sentence or two, especially since it has been a really eye-opening experience.
