I’m applying to some summer science research programs. I want to talk about my volunteering experience. How do I do this without violating HIPAA.

As long as you don’t get too specific it will be fine, but I’d say it would be better to describe how the volunteering experience impacted you more so than what you did on a daily basis.

Simple, just don't talk about patients by name or use any other identifying information. Besides, it should be more about you and what you learned rather than the details a patient's condition.
