Writing Cover Letters for Shadowing

I know that it is highly recommended to include a cover letter and a resume when asking for permission to shadow. I am going to ask as many veterinary clinics as possible.
So for each cover letter, who do I address the letters to if there are multiple veterinarians in the clinic? Is it recommended that I should pick and choose a specific veterinarian or just address them as "Dear veterinarians of blahblahblah clinic" ?

Personally I would address it to the vet who owns the clinic. Usually the website will have bios on the doctors that work there and it'll state who owns the practice. If not, then I would call and ask.
