You're not lacking EC's - your application is very well rounded and stats are solid. Definitely mention the Pharmacy technician job, and try to get some other eyes on your PS/EC descriptions before you submit.

Your current list is okay but I would aim for at least 20-25 schools total.

On top of what Faha recommended, you can also look into: Albany, NYMC, SLU.
