I have noticed a bunch of schools require 1 year of Physics and explicitly say "8 semester hours". I majored in engineering and we had two semesters of Physics, specific to engineering students, that were 6 hours total (including lab). How strict are schools on the 8 semester hours requirement?

I attached a screenshot of what is recommended by my undergraduate university's pre med office. I graduated a few years ago and took 121 and 123.

as always your best bet is to call the schools and ask.

did your degree require any other physics-like or physics heavy courses where you could say you got extra phyics content?
